Celebrate the Bounty of Fall in the Midwest with Chef Alan Bergo of Forager | Chef. We’ll start off with Chef’s wild mushrooms he foraged on local sourdough with warm brie, afterwords we’ll dive right in and discuss different types of squash, what to do with them, and how each can be cooked in different ways to avoid repetitiveness. We’ll prepare a traditional Native American harvest dish together with Bergo’s famous homemade bacon, and finally walk through Chef’s secrets to making everyone at your house ask for seconds of eggplant.

Chef Alan Bergo a 16 year veteran of the Minnesota restaurant scene. Alan was sous chef of nationally recognized Heartland Restaurant in St. Paul, executive chef on The Salt Cellar and was chef of the iconic Lucia’s in Uptown. Bergo is a passionate chef focused on local and wild ingredients and is most widely known as an authority on wild Midwestern food, especially mushrooms.
